Quando il cibo
è identità
In Palermo, food isn’t just something you eat—it’s a way of life. Street food is born on the streets, in the hands of those who pass down simple recipes rich in history: pane ca meusa, panelle, cazzilli, and arancine.
It’s the most authentic way to experience the city—with the aroma that whets your appetite, the sound of oil sizzling, and the voice calling out “assa mancia.” Here, tradition isn’t just a memory: it’s a daily ritual.

Who We Really Are
We are the children and grandchildren of those who truly invented *pane ca meusa *. This is our legacy: a promise made to those who came before us, to preserve and honor the traditions of Palermo every day. We do this for ourselves, for the people of Palermo, and for those who visit Palermo in search of its most authentic flavor.
What We Dream Of
We dream that everyone who walks through Porta Carbone will feel like they’re part of the city. That tourists will return home with Palermo in their hearts, and that locals will find a piece of themselves in our dishes. Because this is our dream: to bring the city to life through its food.
The recipe that never changes
Since 1943, we’ve been doing the same things, the same way. Pane ca meusa, panelle, cazzilli. For us, tradition isn’t just a word for a museum, but a ritual we renew every day. It’s respect for those who came before us and love for those who will come after.
The right ingredients
It takes more than just spleen and lung to make a proper “pane ca meusa”—we put our hearts into it (metaphorically speaking!). But it also takes hands, smiles, and stories. Every sandwich is born from the work of those behind the counter and the affection of those who stop by to eat it. Because our real secret ingredient is people—everyone, inside and outside the kitchen.

Una storia
di famiglia
Porta Carbone is located in Cala, in the old port of Palermo, where boats loaded with wood and coal once docked.
It was here, in 1943, that our family began serving “pane ca meusa” to port workers and visitors passing through Palermo. Since then, four generations have carried on the same tradition: simple ingredients, skilled hands, and a warm welcome that never changes. Today, just as back then, every sandwich tells a story of the city, its history, and our family.
The family
Porta Carbone is made up of people. Of those who started back in ’43 and those who today carry on their grandparents’ traditions. Of the team that cooks, welcomes guests, and never stops.
And then there are you—Palermo locals and tourists alike—who make all of this possible, who come for a sandwich and stay for the atmosphere. Because Porta Carbone isn’t just a restaurant: it’s an extended family, a family that’s always well-fed.
Great tip!
